So this is a dumb and probably obvious question, but I've just begun some preliminary research on Windows 10 LTSB, and this sounds like the perfect version for our business, since we wouldn't want Store, Cortana, or any of that other junk.

However, I would point out that if the Store, Cortana, and apps are the issue, those can be disabled via GPO for the Store and Cortana or outright removed apps. May not be worth the extra expense, especially since you could upgrade to 10 Pro for free.
